Rosti!!!! My dh is German, we eat alot of Rosti. I never thought of doing it with sweet potatoes, maybe I will try them.
Oh, and if any of you are so inclined, rosti makes for great hangover food--the greasier the better. Of course I wouldn't know from personal experience
ETA, where was the rosti booth at the RCF, lupin? I didn't see it, and I walked the food court area several times looking for something good to eat. I ended up having chili, that the booth proudly advertised was GRAIN FED BEEF. I was not impressed with the food choices there.
