Is the savory the same as summer savory?
There is Summer Savory and Winter Savory. Summer Savory is an annual, and is the one most often grown in herb gardens. Winter Savory is a perennial. Both are used the same way.

This is an easier mix than the one above. Herbes de Provence mixes often have more in them than this mix does, but this is one that I actually bought at a market in Provence some years ago, and I like it.

Herbes de Provence -

All the herbs are dried.

Mix together equal parts: savory, marjoram, basil, rosemary (crushed), thyme

I usually whirl this in the spice mill for a moment to make things finer, but it shouldn't be a powder.
I usually add dried lavender flowers to mine.
Keljonma, I've seen mixes with lavender, and fennel, and a few other things. I like this one just because it is so basic. And, while I love lavender, somehow I have never developed a taste for it in my food. But it is certainly an option for those who want to add it. BTW, have you any herb/spice mixes to add to the list?

kel, what are "cut and sifted" rose hips? I plan on gathering tons of multiflora rose hips this summer.

And the lemon peel....dehydrated zest?

Can't wait to make your tea mix recipe!

Cut the rosehips in halves or quarters, depending on size. Sift through them to make sure there are no bad spots or greens attached and remove the seeds.

I use a knife to remove the lemon peel and then cut the peels into strips, instead of zesting them on the microplane.

I just went to the plant place down the road. Which thyme do you recommend as a general purpose thyme? They had every imaginable type, it was overwhelming. I didn't know what to buy, and I just want one!

Help?

English or French are general all purpose cooking thymes. There are some citrus thymes that are good too.
