Homemade Peppermint Patties?

I used to get these wonderful patties when I went to a store in SD...the ingredients were:
Honey
Peppermint Oil
Unsweetened Dark Chocolate.

I would guess mixing the honey and P.O. together, then drip blobs onto parchment paper...put them into the fridge or freezer...once hard, dip them into the chocolate?

I want to try myself, but I don't think I would get past the first step. :( I love peppermint patties!

Thats why I will try the wedding mint recipe for the inside. You just add powdered sugar to cream cheese till you have a dough. Add peppermint to taste.
Roll out!

You could use Meringue powder if you are worried about raw egg whites.
But I think that I would make some more of the Marshmallow fondant that I use to cover cakes and just add flavoring and a bit of food coloring to the melting part of the marshmallows and then roll or form little patties of the flavored fondant lightly freeze them and then dip in the melted chocolate.
You could flavor the fondant with what ever flavoring you like--now that I think about it you could even add chopped nuts(if not allergic) or coconut or even crush some candy canes and add to the fondant! :weee
Or chopped dried fruits or candied fruits... Great you guys!! Now I am hungry for candy! :drool

For the fondant- you just melt about a packed cup of mini marshmallows and one teaspoon of water till the mallows just puff but not burn(you can do this any way you want.) Add the flavoring and coloring to the melted mallows and then start working the powdered sugar in- it usually takes about a lb of the powdered sugar per cup of marshmallows and it does take some working to get it all in--you want to knead it till it is like a soft play dough type texture. For rolling tho use the best marshmallow you can.. for just playing around and making balls/animals/figures that are gonna be dipped you could probably use the cheaper store brands... For some reason the good ones don't crack as much if you have to roll it out thinner.
If you are a person who just has to have a recipe they are all over the internet now and they even have a chocolate one that I want to try!

Wedding mint recipe for filling.

1 (8 oz.) cream cheese, room temperature
2 lb. powdered sugar
Coloring, if desired
Flavoring of peppermint, almond or rum

Blend until smooth; then work with hands until smoother. Make little balls and flatten with fork; or roll on powdered cloth or board and cut with cutter in any shape desired. Toss in regular sugar and lay on wax paper on sheets overnight, then can pack in tight fitting boxes with wax paper between layers and freeze. Will keep several months. Makes about 400 small candies.

Growing up, we always handmade mints for weddings. We have pretty molds for making leaves and roses.

But, you can just roll this out and cut the circles, chill and then dip in the chocolate and then chill again!
