Crystallized ginger is super easy to make, too. (and cheaper, that way, than buying it)
It will be as hot or as mild as the particular gingerroot you made it from. It does not keep as well as storeboughten crystallized ginger (gets dried out) but I suspect that is probably a comment on Things That Are Added to storeboughten crystallized ginger -- and the homemade stuff keeps just fine in a sealed container in the freezer.
