I have stored store bought pasta for more than a year in glass jars without issues. I also place dried bay leaves in the bottom and the top of each jar to help keep out pantry moths and buggies. All my long term pasta is stored in my basement in my store room pantry, so it is mostly dim light and cool year round. Any pasta in my kitchen pantry is short term and used within a few months. I do NOT keep any pasta or grain in it's cardboard boxes because those always get hit with buggies and moths almost guaranteed.
I think the longest I have kept home made noodles (pasta) is about a year. When I am over run with eggs and have some time I make the noodles and lay them out, coated in flour until they are completely dry. If I do get that big dehydrator I will probably switch to using it instead of air-drying. When I pack the noodles into gallon glass jars I shake as much flour off as possible and add the bay leaves like the store bought pasta.
