First, wrap your meat well in plastic wrap.
Do not skimp. Several layers are needed.
Now, cut a piece of paper and lay it out.
Tuck the left hand corner over and under the meat.
Now pull the right hand corner over the meat.
Tuck the upper portion of the paper under the meat.
You are striving for an "airtight" seal.
Fold the left side over the meat and tuck the upper portion under the meat as well.
Now, tuck and fold the upper portion into a nice and tidy tail.
Now roll your package onto the tail.
Fold the end under, crease flat and tape in place.
Label and freeze!
