Almost Self-Reliant
"HUSBAND TREATS" COOKIE BARS
My husband named these, so please don't take offense! We love these cookie bars; healthy enough to be a meal, but sweet enough to be a dessert/snack. Or a treat when your significant other pleases you----
Mix together in large bowl:
1/2 cup softened butter
2/3 cup sugar (I use half brown, half white)
mix in one large egg
Add
1 cup shredded carrots (I put two cleaned carrots in the blender on grate; works "grate"!
1 teaspoon vanilla
1/2 cup milk
In another bowl, mix:
1 and 1/2 cups sprouted WW flour (or whatever you like to use)
1/2 teas. salt
1 teas baking powder
1/2 teas cinnamon, rounded
1/2 teas pumpkin pie spice, rounded
Add dry to wet and stir
Then add:
1 cup raisins
1 cup rolled oats
1 cup nuts
Use 9 x 13 or similar pan. Line with parchment paper, or grease pan. I like parchment, cookie does not feel greasy. Press mixture into pan and bake at 350 for 25 minutes. Cut when cool. Refrigerate the next day.
Great microwaved for a few seconds, with a big glass of milk.
