Are you using a "Bread" flour? Or an "All Purpose" type? Or Whole Wheat?

If you aren't using a Bread flour, you may need to add more gluten to the flour to get a better rise and texture.

Gluten can be purchased in most Grocery Stores these days, in the Baking Section.

I have been using an all purpose flour and wheat flour. I will see if I can find the other read to. This is getting very frustrating. It always looked so easy when my mom made it.

Where do you live? Are you adjusting for altitude if you are up high?

I like King Arthur's when I bake bread. It's very trustworthy.

Hmmm, I live in Florida, would I need to change something for that? I changed up the order of adding ingredients to the bread machine omitting the yeast proofing for 10 min and it came out better. Not perfect but it is an improvement.

I'm having the same problem and I live in Indiana it is the last rising I use a bread machine too I don't know I think it is the flour I use allpurpus too I will keep trying and keep reading this post to see if u get any better results

I don't have a bread machine, but I tried this recipe

for the first time two weeks ago. My family is hooked and my husband bought flour and yeast in BULK after trying it. This recipe calls for olives and such and I have adapted the basic bread dough from this for all types of bread.

It wasn't hard to make at all and inspired me to try more bread recipes. Maybe if you try making this one from scratch you can get more of a feel for it. Each loaf I've made with this recipe has come out better than the one before it, and even the first one was pretty darn good.

I have given up baking bread in my bread machine, the only good thing it does for me is mix the bread. I am thinking of selling it in my next yard sale.

I'm interested in purchasing a used bread machine but want the right one. I think I'm going to start a bread thread about machines so people can give their imput. My "mall" is the Goodwill and Value Village so I have to give Hubby a few names to check for and a few to not.

What kind is your machine, Neko chan? It doesn't seem to be very helpful. But instead of hijacking your thread, I'll start a new bread one.
