No this is not a recipe :p I have tried to make cheddar this a.m. but it is NOT doing quite right. I followed directions up to the rennet, but am not getting a "clean break." How long can it possibly take? I am patiently/impatiently waiting, and have been since...oh...bout 9 a.m. :th Did i maybe mess it up big time and stand no chance of getting cheddar from this batch or what? I'm a first time cheeser :lol: i have NO idea if I have done it right or not. NEED HALP PLEASE!!! :) Thanks in advance!

Ok I have WHOLE fresh RAW Jersey milk with lots o cream I am using. It was milked out 4 days ago. I used cultured buttermilk as a starter and a whole rennet tablet. I let it sit overnight with the culture, and it clabbered. Then this morning I did the rennet and stirred it in good and left it. Maybe it isn't warm enough to break clean? I put it in a slightly warm oven about an hour ago thinking that may have been the problem all along was it got too cool to work well. I'm about to go check it. Hope I'm right :D

Still not quite right, but (maybe wishful thinking) it seems to be improving. Can I leave it till morning?
