so after much research it appears that this thing I inherited is a vinegar mother, made in mexico with pineapple

so I have taken pineapple scrap topped with water in a gallon jug and added the mother (and some sugar)

covered it with cloth so it can breath, it is in a darkish warmish spot

with the mother the vinegar should come along faster...

does anyone know how fast? a couple days? weeks?(most recipies I have found talk about vinegar w/o a mother)

I know my friend likes to drink it fizzy, (right away) over later when I believe it is real vinegar

and can I use this mother with other fruits, or does it have to be used with only pineapple?

thanks so much to anyone who knows these sort of things!

I'm not familiar with pineapple vinegar, but if you have a vinegar mother it ought to work with things other than pineapple. You might experiment by putting part of it in some apple juice or wine and seeing what happens. "What happens" usually takes several weeks. So, pineapple vinegar can be drunk "straight up"? Or is that only in the early stages?

yes pineapple brew can be drank as I now understand it after two days (or so) with it's mother,

it is a fizzy drink that tastes a lot like beer,

it tastes very good IMO, now, my friend says it doesn't have alcohol in it, but it tastes very much like it does, perhaps only a low amount

now this is her preferred way to drink it, as a refreshing brew on day 2
and it tastes quite good,

it turns to vinegar after that point ( I accidentally went right to vinegar, and missed tasting the brew on day two, for some reason I had two weeks in my head, and that is when I finally checked my concoction)

I have been adding it to my tea and lemonade

hoping it has some of the healthful benefits that ACV has that I am tired of buying at a high price

I hope to make my own ACV this fall when apples are in season

for now I have about a gallon of PCV (I believe,)

I have it in the refrigerator,

I am guessing I really don't need to keep it there? I don't store other vinegars in there...?
