i need casserole recipes!

As the days get shorter, I find myself fixing more casseroles. And the family would like me to very them more. Any recipes would be helpful.

One of the kids favorites is "spagetti bake"
Noodles- any kind- cooked and drained
Spagetti sauce
Stale bread- cut into cubes
Meat
Mushrooms, onions, green peppers
Mix all this and put in a cake pan
Top with cheese
Bake at 350 till cheese is melted and bubbled

One of the DH and DS's favs is a oldy but a goody:

Tator tot casserole

1 lb hambuger
1 med onion chopped
1 can cream of mushroon soup
1 pk tator tots
1 cup grated cheese

cook burger and onion drain mix in soup put in baking dish top with tots bake 30 min then top with cheese bake till melted

you can also switch out the mushroom soop with tomatoe and add 1 can green beans

most of my casseroles come from takimng whats in the refrig and mixing with some kind of sauce and baking.

Shepards Pie

made with lamb usually but of course I make it with hamburger. so simple and delish/one dish wonder.

casserole with ground beef, carrots, corn, peas, topped wtih mashed potatoes. of course you can vary those veggies to your liking along with varying the meat content if you wish.

good thing about it you can do it a ton of ways to fit your taste.



and what is listed sounds delish so far! :)
I have variations of both of those dishes.

My family really likes this recipe from a lady I used to work with:

Special Shepherd's Pie

Bake a spaghetti squash until tender (cut in half, removed guts, place cut side down in a baking dish, add 1 inch water, bake at 350F) and put aside.

Boil up 8 potatoes and mash as you usually do (we add lots of butter and milk or sour cream) and put aside.

Brown 1 lb ground beef (we use bison) with chopped veggies (onions, garlic, carrots) and stir in half a small can of tomato paste. Add 1 can/1 pint jar of baked beans and a cup of frozen peas and mix together. Season with salt & pepper if needed.

Spread meat/veggie mixture in bottom of 9x13 pan.

Scoop spaghetti squash "noodles" out of shell and spread over meat mixture.

Top with mashed potatoes.

Bake at 350 until tops of potatoes start to brown and meat mixture is bubbly. Can top with a bit of grated cheddar if you like, my family likes it plain :)

This makes two meals for us, with salad and bread.
We also like:

Tamale Rice Dish (from Company's Coming One Dish Meals by Jean Par)

1 lb ground beef/bison
onions, garlic, green pepper chopped
2 14 oz cans stewed tomatoes (I use 1 quart home-canned)
1 cup frozen corn
1 envelope taco seasoning (I use 1 tbsp Epicure Taco Seasoning )
1 tbsp honey
Chili powder and cumin to taste
1/2 cup water
2/3 cup white or brown rice

Brown ground beef and chopped veggies, add remaining ingredients, simmer until rice is cooked, pour into casserole dish.

Sprinkle with 1/2 cup grated cheese, dab with sour cream, sprinkle with olives and serve with plain nacho chips.

I make a dish my grandma called Roman Holiday.

I take a lb of hamburer meat and brown it with chopped onion and chopped garlic... some chili powder, a little salt and pepper.. after browned I add a can of stewed tomatoes plus a little water..

I cook some elbow macaroni,
then I layer the two in a casserole dish

macaroni, meat, grated colby or chedder cheese, and repeat till all are gone ending with cheese on top.. bake in 350 degree oven till bubbly and the cheese is melted..

I don't have a written recipe for it I just watched her make it for years.. if anyone else has heard of it and makes it maybe they can post the recipe..

My Grandma used to make this too! I have a little old church cookbook from the 50s that has a few of her recipes in it:

Roman Holiday

1/4 cup Crisco or lard
1 onion, chopped
2 cups cooked spaghetti
1 lb hamburger
1 tsp salt
1/8 tsp pepper
3/4 cup grated cheese
1 1/2 cups canned tomatoes

Fry onion in fat, add meat and seasoning, cook 5 min. Put a layer of spaghetti in baking dish, add meat mixture and drippings, then ad another layer of spaghetti. Pour on tomatoes, sprinkle with cheese. Cover and bake 35 min in moderate oven. Remove cover and bake 10 min longer.
She never actually cooked it "by the recipe", I think she just put in amounts for the sake of the cookbook. :)

Another dish with her name under it is:

Mexican Pork Chops
6 lean pork chops
6 tbsp rice
3 small onions
1 green pepper
2 cups strained tomatoes
2 tsp sugar
3 tbsp shortening or lard
salt & pepper

Melt fat and brown chops well on all sides. Wash rice and place 1 tbsp on each chop, sprinkle with chopped onion and green pepper. Season tomatoes with salt, pepper and sugar, then pour over and around chops. Cover closely and cook slowly for about 1 1/2 hours, adding a little water if necessary as tomatoes cook down. Lift to hot platter and serve.

funnyfarm6.... I have an old 1965 casserole cookbook called favorite recipes of home economics teachers it has 324 pages with 3 to 6 recipes on each page and it has about 50 pages of bread recipes as well. I really have no use for it. My husband does not like casserole and I tried to give it to my son and he does not want it either so if you think this is what you are looking for I will gladly send it to you.I will be heading to town tues. just pm your address and you can have it

One of our family favorites, use any amount of what you like the most:

Brown ground beef with some onion. Add a couple cans of tomato soup, melt some cheese in it, add salt and pepper. Simmer a bit, add some cooked noodles, simmer a couple minutes longer. If you like bell pepper or mushrooms - add 'em, that's pretty good, too! Sometimes I bake it, other times I just serve it from the skillet.

This is one of those recipes that it's almost better the next day.

A couple other things my kids like:

Taco soup
1 - 18 oz can black beans
1 - 15 oz can cream corn
1 lb hamb. Cooked
1 onion chopped
1 pk. Dry ranch dressing
1 pk. Taco seasoning
1cup water
2 - 14 oz cans diced tomatoes w/ green chilies
2 - 15 oz cans pinto beans
Mix all in a pot simmer till hot

And


Sludge (so called for the way it looks)
10 lb potatoes- pealed and cut into 1 inch peices. Boiled till cooked- drain 1/2 to 3/4 of the water off
2 lb sausage cooked
2 lb bacon cooked and crumbled
4 cans green beans
Heat on low till hot

My sister likes to use ham or hamb.
I have also used deer and sometimes add onion or a little corn
Add or subtract anything you want.
