I need to deep fry something--what's best to use?

I would use whatever is handy myself. Dace makes a good point about the peanut oil. But then a lot of oils are prepared at the same processing plant as the peanut oil and have that little disclaimer on the bottle that says (the contents may have come into contact with peanut products).

I am with Pat on the no patience issue. I use one large pot, as full as reasonably possble and fry it all at once.
(But then again, I will use lard or cheap oil (whichever is most handy, with no thought to the healthy or unhealthy issues). And fried okra, fried eggplant, fried green tomatos, fried pork chops, and fried everything else are a Southern Girls best friend.

You are posting the recipe for those bitterballens aren't you?

Well, I can post it, it is a traditional food for our Christmases, as are olieballen. Starting a new thread :)
