I just picked up my fresh, raw (pastured) jersey cream today. Sam and I also got to visit and pet the cows and some of their calves. (Each had a name!)

Anyway we are making butter tonight with it. It is 100% pure cream too. Apparently the cream you get at the store isn't 100%.

This creamery has been selling raw milk for over 20 years. We have been buying their milk for the past two years now, however, they just got a cream seperator and now they sell this rich cream to the public.

While I was there I picked up some raw cheese, more milk and a couple of books on making cheese.

The name of the creamery is Dungeness Valley Creamery, located in Sequim, WA~ if anyone around here is interested, I'd like to give them a shout out. ;)

eta: I typed milk where I should have typed cream. :p

Oh, if anyone wants the recipe, here ya go:

1 pint heavy cream or whipping cream
1/2 cup cold water
Cheese salt (optional)

1 Let the cream sit at room temp (72) for several hours to ripen slightly.

2 Pour the cream into a 1 quart canning jar with a tight fitting lid and shake vigorously for 5-10 minutes, or until the butter has formed.

3 Pour off the liquid buttermilk and spoon the solids into a bowl.

4 Add the water and press the solids with the back of a spoon to help expel more buttermilk. Pour off the excess liquid and continue adding cool water and expelling buttermilk until the liquid runs clear.

5 Add salt to taste, if desired. Refrigerate overnight, and enjoy!
