Iv'e got boneless chuck & DH doesn't like it~ now what?

I bought some boneless chuck on sale and not sure what to do with it. The family does not like stew or pot roast...and it will be warm here today.

I was kind of thinking about just throwing it in with some salsa, fresh lime & orange juice, cumin and calling it taco meat.

Someone have a better idea?

This blog may have some ideas for you. This woman started a blog about using her slow cooker every day for a year. She depends a little more on ingredients that I wouldn't use than I like, but that can be got 'round. Your idea of salsa etc. sounds like it might be nice.

I did exactly that, made a 3lb last week and a 2lb one the other day and am still eating on it. After 8 hours it is easy to pull apart and goes nicely in a taco shell with the rest of the fixings. I used 8oz of medium salsa that has a kick to it and came out perfect. I read about it somewhere else on this site.

How are you doing on trimming back on your carbs by the way?

ORchick..thanks for that link! I am going to read thru it. My family is not fond of the pokey pot (as BBH affectionately calls it :gig ) They call meals out of it "crock slop" :smack I try to cook things like meat and serve seperate sides to avoid the whole 'slop' comment. :somad

DH is sort of the same way, about the crockpot. I tend to use it more for making chicken stock, after having had roast chicken; or cooking dry beans to use in something else; or making duck confit; or rendering lard. I don't do too much actual meal cooking in it - though lamb shanks are an exception, and really taste good after that long slow cooking

crock slop!??!? oh golly...

i woulda gone with taco meat b/c thats what we had today - but we used chicken meat with oregano and tons of cumin.

or

you could add tomato sauce and italian spices and have a really meaty pasta sauce

or

would they eat french dip sandwiches? or is that too gluten for your kids?
