That is why I went through all the trouble of weighing off and grating and freezing pounds and pounds of zucchini in Summer! ;) It is delicious, warm or cold, and so easy to make. Plus it uses up a few eggs.

DH and the Wildbunch loves any eggy so this would fit the bill. I imagine it could be made in the crockpot. A good summer time vegetable glut recipe.
