I thinly sliced 1/2 of a jicama and pan fried the slices in some leftover sausage grease. I was going for potato chips, but what I got was the most delicious tasting 'home fries' I've had since I gave up potatoes. Just sprinkled them with a bit of seasalt.
I think if I were to dehydrate the slices a bit first I might just be able to make potato chips out of them.
I also saw over on Marks Daily Apple that someone made hash browns with shredded jicama. They said the jicama needed to be dehydrated a bit first. Anyway, I'm excited to add this to my boring breakfast menu.
