I'm making a seafood coconut curry type soup and I know the jicama will be a perfect potato stand it.

Ok, I found some!!!!! I picked up three of them, I thought by the looks of them, they might last a while in cold storage.

Now, hit me with all types of recipes, and ideas for them please!! :D

I haven't cooked with jicama, but I do know that it is good cut up raw on the veggie tray with dips. And I have read that it has the right texture to stand in for water chestnuts, which I intend to try someday, as I love water chestnuts but haven't really liked the canned ones since the time I was able to get them fresh.
I look forward to getting other ideas here :D
