Leftover mashed potatoes

What do I do with 'em? I know y'all will have some good ideas for me! Caveat - I don't want to do shepherd's pie

Put them in the freezer for later. when you thaw, they'll look kinda fnky, but add a bit of water or milk when heating them, and they're fine.

I eat them for breakfast w/some gravy and meat.

I've done that before, too - works a charm. But I'm in the mood for doing something with leftover mashed potatoes, just don't know what all I can do with them. I know there's a potato candy (but I don't want that either) that's (do a google search to get proportions) made by adding powdered sugar and peanut butter.

We add onions and some milk and then fry em. Finger lickin good!

Already did that, and we're out of meat and gravy now

Hmmm, deep fried mashed potatoes - how would I do that? (Arby's used to have a snacker like this, and I tried to duplicate it, but wound up with mashed potatoes oozing all over my deep fryer. Think my potatoes were too "fresh" when I tried it, though - made 'em just for doing that, and it might've helped if they'd been cold)

Pan fried not deep fried. Think pancake. But you eat it with other stuff.

Oh yea! leftover mashed taters makes wonderful potato cakes! Fry them up in the skillet, very good for breakfast.
