Leftover Taco Meat

My DH fixed dinner last night as a treat for me. He fixed tacos and they were very good, but he fixed wayyyyy to much meat. I have over a pound of cooked hamberger meat seasoned for tacos (seasoned with the packets from the store-but nobody is perfect LOL).

So what do I do with it? Does anybody have any recipe ideas?

cool it to room temperature, in a large bowl add:

meat
1/2 head of chopped lettuce
2 cut tomatoes
1 pkg shredded cheese
1 bottle of Western dressing
2/3 bag of crushed Doritos (or generic equivilant)
(onions are optional)

Mix well and enjoy!!

Its usually good for a couple days in the fridge, unless your at my place and it lasts about 10 minutes, lol

DW fills a cookie sheet with tortilla chips, sprinkle taco meat over the chips, sprinkle 1lb of shredded sharp cheddar, bake till the cheese melts, Nachos

Quesadillas , sprinkle taco meat on flour tortilla, sprinkle with shredded cheddar, top with another tortilla, fry in pan till tortilla starts to brown on bottom, flip and repeat, cut like a pizza, we use sour cream on the side.

On top of a giant salad and don't forget to add some cheese.

I don't eat tacos, so when I make them, I have a giant taco salad and the others devour the tacos.

Delish!

I made these with leftover taco meat and we thought they were really good, but I did cut back on the sugar.
Calico beans

I used the crockpot also instead of the oven
Ingredients

* 1 lb ground beef
* 6 slices bacon
* 1/2 cup chopped onion
* 1/2 cup ketchup
* 1 teaspoon salt
* 1 teaspoon dry mustard
* 2 teaspoons vinegar
* 3/4 cup brown sugar (packed)

* 1 (15 ounce) can kidney beans

* 1 (15 ounce) can pork and beans

* 1 (15 ounce) can butter beans

Directions

1.Fry bacon until crisp.
2.Drain.
3.Fry ground beef in fat until tender.
4.Combine onion, ketchup, salt, mustard, vinegar, brown sugar, and partly drain beans in a 3 quart oven container.
5.Mix well.
6.Add hamburger and crumbled bacon.
7.Bake at 350 degrees for 40 minutes.

Taco Omelet

1 lb ham. meat
taco seasoning packet or use your own recipe ETA I just copied and pasted this from another thread, I know you already have the meat prepared. ;)

8 eggs (two per omelet)
shreaded lettuce
large tomato diced
green onions sliced thin
sliced black olives
grated cheddar cheese
plain yogurt or sour cream

Pretty simple, make an omelet and fill it with the taco meat and cheddar cheese. Top it with the remaining ingredients...I used tons of lettuce and tomato. My 13 year old loved it and ate all of her lettuce and tomatoes without complaining.

I usually can taco meat in the 8 oz jelly jars and have it ready to serve when my kids want taco's. It works out great for us.

personally I'd freeze it for future tacos :p

In addition to the good suggestions in previous posts, you can put taco meat in a frittata (esp good with potatoes, sweet peppers, hot peppers, and onion, with or without a bit of cheese added). Or put it on pizza -- either on a regular pizza, which is fine, or make a taco-style pizza, with regular or cornmeal crust, a smear of tomato paste instead of pizza sauce, taco meat, and whatever toppings you want.
