Leftover Taco Meat

I have frozen taco meat too and it's good that way also. I am just a canning freak! lol.... I love to see it in the jars..:)

Not sure if anyone still has extra taco meat around ;), but it would also make a great soup. Dump it in a pot, pile in beans (I love black-eye peas, black beans and kidney for this one), dump in a quart or 2 of canned tomatoes, beef bouillon to taste and some water to get it to a soup consistency. Could also add leftover corn.

We like this one with taco toppings on top of the soup--corn chips, onions, black olives, cheese/cottage cheese/sour cream, fresh chopped tomatoes, etc.
