I cook my turkey kind of weird anyway. I always place it breast down in the roaster with about an inch of water, turn the oven on 300 and leave it for .... well till it falls off the bones!
I also like Bee's idea about boning the birds. The bones take up the most space. Since you have so much you might consider making some canned turkey meat for use in recipes later this year if you have a pressure canner or how about marinating some for turkey jerky!
