making vinegar questions

Mine didn't get any mold. Hope yours is still ok. You should be able to smell it turn to alcohol and then vinegar though.

I have alcohol!! It has a strong alcoholic smell and a thick layer of bubbles on top. The temp in here stays around 70 during the day and cooler at night, but the cabinet it is in is above the fridge so it is probably warmer in there. There was a tiny bit of mold that I scooped off. I will get a pic, but I need to get some batteries for my camera first.

I have to say, I haven't noticed any alcohol smell to mine. Maybe because I started with a bit of vinegar? I haven't tasted it yet.

If I filter it- what would you use to get out the good culture to use it again and leave the vinegar relatively clean looking?

If my vinegar would ever oblige me by forming a mother :rolleyes: I would scoop the mother out of the finished vinegar (with clean fingers, or something else non-metallic) before I strained the liquid through unbleached muslin or several layers of cheesecloth. As it is, I strain, or not, depending on how cloudy the vinegar is, and use some of the finished vinegar as the "starter" with the next batch.

When I stirred my cider/alcohol stuff today I noticed it doesn't smell as strong as it did yesterday and I may have detected a hint of possibly vinegar? I definately noticed it smelled more apple-ey and not overwhelmingly like yeast.
