maple sugar candy or maple flavored anything are very much favorites of mine. i'm also ok using the imitation maple flavoring in some recipes because i can't really afford how much maple syrup i'd like to use instead. when i was making candies regularly i would use maple syrup for some fillings and it worked out so well in the end.
as for making maple syrup from sap now for the bigger producers it helps a lot to use RO technology to filter out a lot of the water before boiling down the rest of the way - saves a lot of $ and time (i wonder if they sell that water?).
