I used whole for Nicole being younger and just switched to 2% when Tony got those bad chol. numbers.

I will make these tonight and see how I do!

I'm lactose intolerant these days so we usually use 2% or skim lactaid milk, soy or rice milk in a lot of recipes that call for whole milk.

Made these tonight to have with dinner! Oh, wow...how good! I used about 2 TB of mayo and buttermilk (had some I needed to use up - how do you know when buttermilk goes bad?) and baked them on a parchment covered sheet in the toaster oven at 450 F for about 9-10 minutes. So nice and crunchy outside, feathery light inside! Delicious! Hope I can save the last two for breakfast tomorrow with country ham and eggs. Oh, and I used a large fork to first mix in the mayo then stirred in the buttermilk.

You're welcome...I LOVVVVVVVVE these! So easy, anybody can do them. You can substitute 1 or 2% milk with it, I might add a little more mayo though. It's hard to screw these up.

I keep going back to these over and over cause they are so fast! No rolling or rising or kneading or anything. One bowl and you're done. Whenever Chad invites someone for dinner and springs it on me last minute I always fix these and people can't believe how simple they are when they hear the recipe.

Okay people....I just did these GLUTEN FREE!!!

Here is the recipe....still quick and easy just a few more ingredients, I made these for dinner last night and they were so good I made them again for breakfast this morning!


1 cup Bob's Red Mill Gluten Free All Purpose flour
2/3 cup milk
1 Tbsp mayo
1 tsp baking soda
1/2 tsp salt
1 tsp xanthan gum
sugar (optional but I usually use about a tablespoon)

Mix everything and put into a greased muffin tin. Bake on 450 for 10-12 minutes.

You could put these directly onto a greased cookie sheet for a flatter style roll but I haven't done it yet.
