Meal type salad ideas?

I have been eating more salads lately and am interested in some new ideas.

I have really enjoyed a Thai style chicken salad ( salad greens, with scallions, bean sprouts julienned zuke & carrot with sliced grilled chicken on top and a peanut ginger Thai dressing)

Today I am making a smoked tri tip salad ( greens with corn salad, sliced tri tip and not sure what type of dressing, probably salsa mixed with some ranch) My corn salad is grilled corn cut off the cob, red onion, diced avo, radish & cilantro all tossed with EVOO, S&P and a good squeeze of lime.

Have any interesting combos that you like?

Chicken fajita salad...yum! (with guac, pico and yogurt as the sour cream)

I'm not too stellar in the kitchen but I love egg salad on top of a bed of greens, same with tuna salad and chicken salad.

Tomato salad: red onions, black olives, tomaotes, feta or goat cheese sprinkles with a balsamic and oil dressing.

I love chef salads.

It's not that exotic, but I have been enjoying grilled chicken salad on a bed of fresh greens, slivers of red onion topped with Greek salad dressing.

I love cajun flavors
I sautee chicken in cajun spice (very spicy)
then I add that over ALOT of ANYTHING green that goes in a salad along wtih carrots and all that (add a tad of ranch dressing)

I live on that salad above..LOL



Taco salad is another fav of mine

I love taco flavor but don't eat the shells.....so I top over any greens I have tons of taco meat. I just can't get enough of it also. ( I add a tad of ranch into it also)



I always like "something hot" added into cold salad greens. Seems more satisfying to me to have something hot vs. cold.
I don't go more exotic on salads. Just me...but can't wait to see what others suggest.

BBH mentioned Taco salad the other day and shared a great looking seasoning blend. I think I might make tacos tomorrow, just so I can have a taco salad.

i love the cajun chicken idea...love spicy!

We enjoy what I call salmon salad, just grill your fish and put on a variety of greens,with any other fresh veggies you want.Dress with a simple eeoo and citrus dressing mmmm.Great with red onions and oranges.Then there is Greek salad with ham, it's greens, red onion,feta cheese. and julieened ham,I make a greek dressing of eevo,vinegar, and greek spices.:clap good stuff!

The salmon with a citrus dressing sounds good....I am not huge salmon fan but I bet in a salad it would be great!

I make a spinach salad with white chocolate orange vinaigrette from the Food Network which I kinda upgraded.

Fruit and Greens w/White Chocolate-Orange Vinaigrette Salad:

Salad:
1 cup orange segments (supremes, without the membranes or whites)
a quart fresh spinach leaves
2 cups fresh strawberries, quartered
1/2 pint blueberries
1 cup grilled chicken chunks

Dressing:
1/4 cup champagne wine vinegar
1/3 orange juice
1/4 tsp. salt
2 tbsp. sugar
1/4 cup white chocolate chips
3 tbsp. olive oil

Yum you guys these salads sound yummy!

I had another salad idea Dace.
I love fish tacos, so how about a nice fish "taco" salad.

Fish Taco Salad
Pile shreaded cabbage (purple and green) on a plate, add some sprigs of cilantro, top with grilled haddock. Dressing recipe below:


Cilantro Lime Dressing:

Ingredients
1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic
3/4 teaspoon minced fresh ginger root
1/4 cup lime juice
1/3 cup honey (stevia?)
2 teaspoons balsamic vinegar
1/2 teaspoon salt, or to taste
1/4 cup packed cilantro leaves
1/2 cup extra-virgin olive oil

Directions
Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend. Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.


Squeeze wedge of lime over the whole thing.
 
Top
