We get into cobb salad kicks now and again. You can put in anything you like, really, but I use big dinner plates and build the salads right on the plates. I make stripes of the ingredients across the plates: Chunks of chicken or turkey (if there are no leftovers available, I will go to the deli and ask for a 1/2 inch thick slice of turkey breast and cube it....if they don't have any "ends" available for $2 per pound), romaine lettuce, tomatoes, cukes, avacado slices, crispy bacon, boiled egg wedges or devilled eggs, and something pickled like olives or hearts of palm or artichoke hearts....better yet, something fermented. Choice of salad dressing. This is really too filling for me sometimes, but dh LOVES it.
When nice stuff is available, sometimes I will run a bunch of colorful veggies through the food processor and toss it all with homemade dressing. Things like carrots, rutabaga, jicima go through the shredder blade. Things like cukes, green beans, sugar snaps, etc, go through the slicer blade. Sort of like a chunky cole slaw but with my favorite Italian dressing from garden herbs.
Don't forget my colorful cabbage-free coleslaw, too, somewhere on this forum. Super yummy with pineapple for a bit of sweetness.
