I taken my smoking pretty seriously.

I would love to learn how to smoke cheese.

I smoke cheese in that big smoker. You just have to use COLD smoke, and let the cheese age for a bit before you eat it.

SKR8PN, would you use a meatball grill basket? Just curious if serious "smokers" would use such a gadget?

BTW, you have a very nice set up!! I would definitely love to sit under there and sip my iced tea. Oh wait, is that where the cook sits?
