Wow, those pics of the mountains are just beautiful!! And look how busy you have been with the canning! Yummy!!! I am planning to make a BIG pot of stew, and can it...hopefully this weekend.

Moolie - thanks for the mountain pictures, I really enjoy seeing the mountains.

Now about that fruit cocktail, :drool Must go re-count empty canning jars to see if I can whip up a batch before the wife has figured out what I have done.....

We love the mountains, and have a hiking day planned for this weekend, so I can post more photos after :)

Jamie, the fruit cocktail is so easy--this one is called Rosy Fruit Cocktail because it gets a bit pink from the cherries. You can follow the recipe, or just wing it with whatever fruit you have, I think mine has slightly more grapes and peaches than specifically called for, but I figure it's no big deal.

Rosy Fruit Cocktail from Better Homes and Gardens Home Canning and Freezing

a 2 lb pineapple
3 lbs peaches
3 lbs pears
1 lb sweet dark cherries
1 lb seedless green grapes
5 cups Light or Medium Syrup

Wash and prepare fruit, pitting and halving cherries, and cubing other fruit, mix together in bowl then pack into jars.

Pour boiling syrup over (I just pour in 1/4 cup sugar per pint jar when the jar is half full of fruit, fill rest of jar with fruit, then pour in boiling water, stirring to dissolve sugar).

Leave 1/2" headspace and process 30 minutes, makes 9 pints (give or take, depending on how much fruit you have!)

You can use any type of fruit juice in lieu of sugar syrup :)

So, I did it--I canned one jar of my 40 lbs of pears in an old Gem jar complete with glass lid, rubber ring, and modern steel band--and it sealed :)

(I also canned the rest of the 40 lbs of pears and they filled 28 quarts/litres.)

Wow. That's a LOTTA pears! :D

I'll have to see about doing a fruit cocktail at some point... hmmmm!
