Need a kid friendly veg or fruit dish

I hav a cooking class today, 2nd graders. I am uninspired and need some sort of veggie or fruit dish we can make.
On the menu so far ( their choices) GF mac n cheese and for dessert a GF pumpkin dump cake. I need some sort of healthy side dish.... Any ideas??

Bacon green bean teepees :D

Take a (kids' sized) handful of greenbeans, wrap one end in a slice of bacon, toothpick it, then stand on the other end & bake until the bacon is done.

How about a fresh assortment of colorful veggies and herbs cooked in a parchment pouch? Dramatic yet simple! :)

I'm still liking the green bean teepees, it would add height to their dishes and you could tuck a few cherry tomatoes inside the teepee for fun. :p

Do you oil them up with something, or does the bacon do all the work?

Temp on the oven? About how long?

These are on my menu for tonight too!

I do mine at 350* and yes, the bacon drips down the green beans & kinda soaks in :) Maybe 15-20 minutes. I listen for the sizzle on the bacon. Can you tell that I'm a free style cook? :lol:

Oh, and I have the kids rub the bacon in the baking dish before they start wrapping. Keeps the bottom from sticking.

Salt/pepper to taste, but we usually leave them plain. Pork fat rules!

Sounds yummy and fun :)

BBH, I like the mixed veg idea, but these guys are 7 so I try to do minimal knife skils :rolleyes:

I think that tomorrow my middleschoolers will learn how to roast a chicken, news thinking that risotto would be fun... I think mixed
roasted veggies would go well to. All that chopping will keep them busy ;)
