Those teepees sound awesome!

For fruit, you could do a fruit salad. Fruits are soft and generally easy to cut. How about kitchen scissors instead of knives?

For dressing, I use plain yogurt. Sometimes mix some pureed fruit (a jar of baby food) with the yogurt. Hmmm.... mashed up banana in the yogurt?

Serve in 1/2 of a melon?

I vote for fruit salad! Actually, I've been meaning to try something I saw on allrecipes.com, called Fruit Salsa. Basically it's just lots of different kinds of fruit cut up, with a bit of marmalade to hold it together. I think you can make cinnamon sugar tortilla chips to go with it. Maybe it's too much to do, but it's bright and fun, and I'd eat it for sure!

So Dace, what did your end up making? When I get stuck I go by color. I know it sounds funny but different colored veggies have different vitamins. So if I was serving a green salad I might make a steamed carrot or some roasted squash. At least I cover all the bases.

I let them make the green bean teepees.....they did not stand up very well, but got a lot of laughs at me trying! They were yummy too!
