Need dairy/creamy substitute & dairy fats question

Just got my allergy results: buttermilk, cassin, yogurt, American cheese, goat's milk, mozz. cheese, parm. cheese, swiss cheese, whey, cinnamon, oregano, quinoa, safflower oil, bananas, kidney beans and white mushrooms.

What can I sub for sour cream on tacos if I can't have cheese on them either? I love the creamy, cool texture. I think if I could still have them with cheese, I would be fine but without both? And what about in gratin type dishes?

How am I going to live without butter on my veggies?

Is eating avocados, nuts, grass finished beef, and using lard and coconut oil going to give me enough of the good fats?

I linked to a few sites in your journal. Coconut cream is an excellent dairy replacement. Faraon brand is a good one. No added sugar.

I have no experience with reversing allergies, but I've been reading a lot about things like the GAPS diet helping to restore the gut so that traditional foods like dairy can be reintroduced. Some lactose intolerant folks claim they can tolerate raw and fermented dairy products just not pasteurized and processed. I hope you find the answer for you body. :/

Also, would you be allergic to goat milk? Perhaps that could be a dairy substitute, especially if you can get it raw.

Thanks Becca, yes, I'm allergic to goat's milk too apparently. I have a feeling that at some point in the future, the allergies will get addressed and I may be able to go back to having some of this stuff, even if on a limited basis. In the meantime...

Can't address the allergy issues, but for your gratin dishes just mix up some breadcrumbs with an acceptable fat (and maybe some herbs/spice) and sprinkle them thickly on top of whatever it is you are baking; sprinkle the top with paprika, it gives it a nice color. I do this often as my DH doesn't eat cheese.

Just something to think about.
The allergy test is for pasteurize CAFO milk, regardless of type.

Bubblingbrooks, they didn't test for cow's milk specifically as far as I know, but did test and come back allergic to casein, whey and goat's milk.

I'm referring to the fact the the entire milk makeup is damaged in processing, and that damaged product is what is being tested for.
Now, if you have a true allergy, ie., may cause death type, then steer clear.
If you do notice gastric issues with processed, then try raw. Fermented raw would be even better, if your goal is to heal the intolerance.

I guess what I don't understand still is everything in my allergy list is something specific that they tested for. I didn't test allergic for cow's milk. I tested allergic for casein and whey which I thought were the main proteins in raw milk. What I thought I understood is that I'm not allergic to the milk itself, rather the proteins contained therein.

So Bubblingbrooks, if I understand what you're saying is yogurt homemade from raw milk would still be okay whereas the yogurt from the store is what I tested allergic to? Would the homemade yogurt still have the casein and whey? Also, if I'm allergic to buttermilk, it would make me hesitant to draw the conclusion that fermented products would be okay.

I am lucky in that it's not a life and death type allergy, just gastric disturbance and I'm guessing inflammation response. I want to get everything calmed down and cleared out which is why I'm being so strict with myself on this right now. I'm sure at some point in the future, I can try reintroducing and see what happens.
