Need low sodium meal ideas UPDATE

My reason is twofold...we are having a friend over tonight who has high blood pressure and needs a nearly no sodium meal. I thought that would be easy since we don't do much canned/boxed kinds of foods....but the cheese and butter crept into my mind and now I am lost.

Also, Hubby's BP is borderline and I would like to see if his salt intake in contributing....I am a salt lover with low blood pressure and I do all the cooking, so I may be contributing.

Tonight so far I have:

Big salad dressed in EVOO and balsamic

Grilled salmon with EVOO and lemon

Not sure what to do about a veg....everything that I love would have too much sodium, sauteed zucchini in butter and olive oil with grated parm is out....sauteed green beans with butter and lemon may be acceptable. Roasted anything needs butter and salt. I could do roasted spuds with lemon EVOO and Rosemary...but DH has packed on a few Lbs lately and is not eating potatoes.

Anyone have ideas?

Steam the veggies and leave topping choices to the person? You can set out butter, cheese, pepper, an EVOO dressing...

Potato salad easy on the condiments to mix in, but I am low sodium and eat it with just mayo, eggs, a bit of sweet relish and diced onion. Per serving it is wayyyy less than mashed potatoes. Or you could do steamed veggies with a splash of lemon juice for flavor.

ETA: Sorry didn't see the potato issue.... I made some roasted carrots the other day that were very good and low sodium, I forget what if anything I put in them though...onion I think, yeah sounds weird, but actually goes well together :lol:

If you make a potato salad with homemade mayo, you should be able to get away with no salt.
Add things like sage and dill to boost the flavor more.
Oh, and plenty of EVOO!

Not a part of the subject, but low hormones are often an underlying cause of blood pressure issues.
I am up to my eyeballs in research right now on adrenals, and amazed at how often high blood pressure is one of the problems. :th

I'd go with some candied carrots or sweet potatoes. No need for salt at all and go light with the brown sugar by using some cinnamon. Garlic is a great substitute for salt. I can easily do asparagus with some butter and garlic. Another good way to make green beans is to use home canned or frozen green beans so they don't have a bunch of salt in them from the factory and then cook them with bacon and onion. Yes, the bacon is going to add some sodium but it won't be near as much and the onion flavor makes the salt less necessary. When he can eat potatoes again they're excellent roasted with some roasted garlic and olive oil. Cumin is another good spice to use instead of salt. I like it with anything chicken because it seems to intensify the chicken flavor. Try roasting your chicken with some a cumin, mustard powder rub, you won't even miss the salt.

It's actually just about "perfect" but it dips low if I up my carbs.

Those who have a high cortisol output, often also have high blood pressure (and weight gain) as it acts as a vaso-contrictor in the body. Since adrenal fatigue sufferers have higher cortisol levels, this could also put them at an increased risk of seeing issues associated with high blood pressure as well.
