Anyone have any good nettle recipes? I noticed the patches are up about a foot and a half now.

I've only ever cooked and eaten them like spinach. I was thinking of picking some dandelion greens to cook with them and have a nice in season veggie.

I have never eaten nettles. I do remember seeing a nettle lasagna recipe, it looked just like the spinach lasagna I have seen...or a couple layers of spinach in either vegetable or regular lasagna w/ ground meat.

I wish I could find some way to use them that I can get excited about. I've tried tea...meh...kind of not worth the trouble. Maybe I will try cooking them like spinach. They sure are hard to eradicate once they are established. they are pretty much taking over my "woodland wild flower" garden. :(

Make a tea and use it as a hair/scalp rinse. Good for itchy scalp.
