Lovin' The Homestead
I went to a Pampered Chef party yesterday. This was basically the recipe, but I tweeked it a bit. I can type out the ingredients, but since I don't measure stuff when I cook, it's a "as much as you like" kinda thing if not noted.
diced sun dried tomatoes
garlic, (smashed, pureed, chopped or whatever you like)
baked chicken breast chopped
veggies, chopped (brocolli, squash, carrots, sugar peas, whatever)
noodles (bow tie, penne, 11 min type)
chicken broth or chicken boulion
parm. cheese
cream cheese
ok, pour some of the olive oil from your s.d tomatoes into a pan and sautee your garlic til golden, add 5 cups water(with chicken boulion) or chicken broth and a big ol' spoonful of diced sun dried tomatoes, when boiling add 1/2 a box or so of pasta to broth/garlic, cook 11-12 minutes, until pasta is mostly done and water sits under noodles, lower temp to low, add chicken breast and veggies, cook until veggies are done. (I kept a cover on mine so all the water didn't evaporate) take off heat, add a package of cream cheese cover and let melt, stir and serve. top with parm cheese.
