If she has any space at all, she could put up a little florescent or LED light, and grow some Kratky lettuce.

With a bit of supplemental light, 6 nice lettuce plants can be grown in a plastic shoe box.

Are 1. cost reduction and 2. producing quality highly nutritious food.

I didn't see the instructions either for the top 2. All applied. But for me the order is
1 --- know what I am eating
2 --- being prepared
3 --- cut costs
4 ---not relying on others
5 --- additional income
6 --- seeing and enjoying the fruits of my labor.
