well Barb processed an old dairy cow that wasn't producing and she said this cow was Tough (with a capitol T) lol

I traded her sausage, pork chops and a few pork loins for her beef.
I got a bunch of chuck roast, stew meats, ground, etc

we both traded good and I just threw a giant chuck roast into the good old slow cooker, added some marinade and WOW that sucker is delish and tender....threw over some rice and veggies and done deal for dinner. Tony enjoyed the hound out of it.

So I just have to say--the good old slow cooker can make any old tough cow delish to eat hahaha

Wow, lucky you!! Pressure cookers work wonders on those old tough cuts as well. ;)

Sigh.... I don't hate ya... Just hate inflation ruining my budget! Guess I am gonna hafta enjoy either chicken or venison.... I'll live.. But am still super green with jealousy right now!:gig

Low and Slow is the way to cook a lousy cut of meat. ;)

Bro-in-law came over yesterday to help with cleaning up a bunch of brush. We fired up the smoker and cooked 3 pork loins and a 10lb brisket.
Put everything on around 9:00 am, pulled the loins off @ 1:00, then wrapped the brisket and let it finish off till 6:00pm. The smoker was at 225 degrees all day long.
Some of the finest brisket I have ever smoked, if I do say so myself! :old

I know!

I checked some store beef prices and could not believe the cost of steaks lately.

I ran out of beef a bit ago and was waiting for father in law to volunteer up one of the Angus but their freezer was still kinda full right now----cause when we do an Angus we split it.....well, I was waiting and waiting and Rachel said they didn't need beef yet.......so I tought, hmm...Barb said that old cow was tough and I said I got pork. Trade was on cause she doen't have any hogs lol

Our deer is still at the processer. So my freezer is getting meat filled big time

and yes I live on my chickens too....chicken is just somethign we eat tons of here
