I love a good first cold press virgin olive oil.Sometimes you can find a good one on sale.The problem is it goes rancin after while.I've kept bottled olive oil in my basement in a cool/dark place and it was find for up to almost two yrs. I was thinking about freezing olive oil.Every summer i make homemade white clam sauce when i can dig alot of clams and have plenty of fresh parsley.I make big batches ad freeze in qt. containers.I had one that was over three yrs old and it tasted great..I suspect the olive oil had something to do with keeping the clam sauce so well preserved.Has anyone ever tried freezing a good grade extra virgin olive oil for a few yrs..? It's worth buying on sale at a good price, if its an excellent quality olive oil, but only if your able to keep it good until you use it..It would be bulky to freeze, but still curious if anyone has ever tried it here and what the long term results were..:)

I can't imagine why you couldn't freeze it. Fats/oils generally freeze fine. It doesn't prevent rancidity forever but can give you at *least* 2x-3x the "lifespan" of the stuff.

Go do it, and report back to us in a few years :)

Interesting. I only buy small bottles of olive oil because it usually ends up rancid before I use it all. I think I'll try keep it in the fridge. Hmmmm.... for some reason, I had it in my head not to do that. Don't know why.

You'll have to get it out with a knife -- it solidifes at fridge temperatures. (Well, not *solid*-solid, but like thick pea soup, can't pour it out of the bottle)

So... might it work to keep it refrigerated in canning jars that you could fit a spoon into??

I store my everyday bottle in the fridge and I have been storing EVOO in the freezer for the last two years with no problems. My only suggestion is to put in in a container that has a big opening due to the solidifying. Pouring into a say half gallon canning jar would be a good idea as someone else mentioned.
