I have a smaller bottle of good olive oil for salad and foods where the taste is important. I have a second container, much larger and not first-press oil, that I use for cooking tasks in which the oil is a less important part of the taste.

Waaaaaaa! I have a big ol' jug in the cupboard. My son bought it when he was visiting, and I was trying not to use it so most of it would still be here when he came back to the states.

Guess I'll go give it the sniff test.

The only reason they say not to put olive oil in the fridge is because it will get cloudy. Big woop. Fridge it and keep it fresh :D

Thanks everyone. I had heard that it should not be refrigerated, but did not know why. That won't affect it for cooking as far as I am concerned.

Well, i finally made it back to my thread..lol..Thanks all, so it sounds like a go..I know it stays well in a frozen white clam sauce for up to three yrs. Just don't know how long it would freeze.I think i will do a little experiment,say 4 yrs in small unopened can..I 'll take it out in 4 yrs and put in refrig to defrost, cut top off can and transfer to mason jars.
