Omelet ideas!

I thought I would add this to the low calorie omelet thread, but it is not really low calorie...so I started another omelet thread...for all the "regular" omelet recipes.

Here is mine:

Taco Omelet

1 lb ham. meat
taco seasoning packet or use your own recipe

8 eggs (two per omelet)
shreaded lettuce
large tomato diced
green onions sliced thin
sliced black olives
grated cheddar cheese
plain yogurt or sour cream

Pretty simple, make an omelet and fill it with the taco meat and cheddar cheese. Top it with the remaining ingrediants...I used tons of lettuce and tomato. My 12 year old loved it and ate all of her lettuce and tomatoes without complaining.



I also made a goat cheese omelet with spinach and parmesian cheese...:drool topped it with roasted grape tomatoes and carmalized onions.

This is actually a very healthy omelet. Much better for you than any "low calorie" version. Enjoy it with no guilt!

Oh, I feel no guilt! Since I started this new way of eating (thanks to you and the others who have opened my eyes!) I have lost 5, count em, 5 lbs! And my body holds onto weight like a bear trap, so this is really big for me!

Mackay, thanks for your recipe, it sounds delicious!

I would think that anything that you would make into a egg bake, would also work for an omelet.

My mother often made fruitfilled omelets. Usually either homemade canned fruit, strained or fresh fruit, cut up and lightly sugared.

I like
cooked potatoes, chopped
tomatoes, chopped
onion, chopped
garlic, minced
mushrooms, sliced

Saute all of the above and add to omelet, or put in scrambled eggs.
I vary the quantity, depending on what I have on hand.

I honestly don't get why people stress out about egg yolks in omelets, assuming they are from homegrown chickens, unless maybe a person has extremely high and bad cholesterol and knows *from experience* that eating more egg yolks worsens the problem for their own particular body chemistry <shrug>

Lately I make a lot more frittatas than omelets, just because it is easier to make 4 peoples' worth of the former than of the latter; however, for either, some of my favorite combinations are:

diced potatoes and small-cut green beans, fried up in a little bacon fat

or

bean sprouts (or alfalfa sprouts) and water chestnuts

or

bacon, parmesan type cheese and onions

or

onions, more onions, and a bit of cabbage, all well fried til brown

or

whatever veggies ya got (leftover fresh corn is good) with a dab of tomato-type salsa on it.

But quite honestly my favorite omelet of all time is the classic

ham, green or red pepper, and onion

Our fave omelet:

3 eggs, yolks and all
diced ham
diced onions
American Cheese

I like to saute the ham and onions a bit before putting on the omelet.

Microwave version for the quicky breakfast?

Two eggs, chopped onions and peppers, Parmesan cheese, garlic salt, pepper.....2 min. in a bowl lubed with olive oil.

Yeah, yeah....I know....microwave. But, desparate times call for desparate measures! :p

Its still yummy! Stick that bad boy on top of a bagel and you are champion!

maybe its a farmer thing but I grew up on potatoes and eggs. Cube left over baked or boiled potatoes, brown in a little butter and pour in several blended eggs. Sometimes I like it with a little chopped ham.

My favorite omelet has turkey breast, cheddar cheese, chives inside and a little light sour cream on top.
