Omelet ideas!

I have been known to order the "Irish Omelet" at the local diner. Three eggs, homemade corned beef hash, potatoes and cheddar cheese. It is actually on the menu with American cheese. Not sure how that fits so I ask for cheddar instead. :p

Those sound really good! Kind of like a Mexican pizza with an egg crust.

Yeah, I'm trying to avoid "crusts" at the moment, so it worked out very well.

It was really very good too.

I just thought of some interesting combinations for omelets.

Smoked Salmon and cream cheese with sliced cucumbers.

Ricotta cheese with fresh basil and tomato.

Avocado, sprouts, walnuts and swiss cheese.

Speaking of Mexican flavors, I throw together a few spices to make a Mexican combo and keep it in a shaker. Sometimes for breakfast I will make an omlette with it. Hard to explain, but here goes. I fry a corn tortill until it is crisp and put it on the plate. Then I put a pat of butter in the nonstick pan, add 1/2 teaspoon of the seasoning(reminds me of enchilada seasoning in a packet), let it foam for a few seconds to give it more flavor, then add eggs. I scramble, you can make an omlette! I add chopped fresh tomato, avocado, and cheese, turn it out on the tortilla and garnish with cilantro, salsa, and a little sour cream. It's kinda good, if I do say so myself.
