Once upon a time I had a peach relish recipe that had peaches, vidalia onions and peppers in it, but for the life of me I can't find it now. I could have sworn it was in the Ball Blue Book, because when I made it I was a new canner without the internet. I can't imagine where else I would have gotten the recipe. Unfortunately it's not in there. I did find this recipe on the internet, but it calls for pears instead of peaches. I should be able to substitute the peaches and be just fine to can it, right?

Might it be listed under peach salsa instead of relish? I have seen peach salsa before. Sounds good.

That is what I thought at first too, but the salsa recipes I've found are not even close. There wasn't really any spice at all to it. It was sweet and really good on hamburgers. :drool

I found a peach salsa receipe in the ball book that has peaches, red onion (doesn't state Vidalia though) and red bell pepper. Also jalapeno peppers, hone, garlic cilantro. If this sounds familiar I will post the whole receipe.
