I dry a lot of pears, this year I tried soaking them in honey and lemon juice before I dried them, they turned out softer, which I like. I cut 2 of the sides off, then the other 2, so the core is square and I have two big pieces and 2 small ones. One year I tried using an apple corer/peeler/slicer on them, it only made a mess.

I have made pear leather, it tends to be kinda grainy by itself, I mix it half and half with applesauce to make it more pliable. Adding honey and cinnamon is delicious. Stickier, but softer too.

Also, I haven't made it myself, but I read that you have to have 'perry' pears to make pear cider.

Pear-Goat Cheese Crostini
Marinated goat cheese:
4-6 oz. goat cheese
1/4 cup olive oil
2 cloves garlic
1 t fresh rosemary
1 t fresh basil
1/2 t ground pepper

French baguette, sliced 3/8 inch slices
Pear slices
Maple syrup

Bake slices several minutes each side. Then spread marinated goat cheese on slice, then sliced pears (one pear sliced and mixed with 1 T pure maple syrup), then some fresh parmesan cheese (3 T for entire thing). I never really follow this recipe; I do more pears, syrup, and way more parmesan cheese. Then you broil them for several minutes, until toasty.

Aunt Carols Fruit Bread
2 lbs pitted prunes
1 lb dried pears
1 lb raisins
1 lb pitted dates
1 lb figs, if desired
lb sliced almonds
1 cup walnuts

To 6 cups warm water, add 1 cup sugar, 3 tbsp dry yeast, tbsp salt and enough flour to make a batter. Beat well. Add fruits, nuts and enough more flour to be able to knead it. Let it rise, punch down, form loaves and let rise again. Bake at 350 until donemay take almost 1 hour depending on size of loaves.

Caramel Pear Pie
6 cups sliced peeled ripe pears (about 6)
1 tbsp lemon juice
cup plus 3 tbsp sugar, divided
2 tbsp quick-cooking tapioca
tsp ground cinnamon
tsp salt
tsp nutmeg
cup old-fashioned oats
1 tbsp flour
cup butter or margarine
18 caramels
5 tbsp milk
cup chopped pecans

Combine pears and lemon juice. In another bowl, combine cup sugar, tapioca, cinnamon, salt and nutmeg. Add to pears and stir gently. Let stand 15 min then pour into pie shell. Combine oats, flour and remaining sugar. Cut in butter until crumbly. Sprinkle over pears. Bake at 400 for 45 min. In saucepan over low heat, melt caramels with milk. Stir until smooth and add pecans. Drizzle over pie and bake 8-10 min longer or until crust is golden brown and filling is bubbly.



I also had another pie recipe that had an oatmeal/flour/brown sugar and cheddar cheese streusel on top. It was excellent!

Well, now I have pears. I have my entire dehydrator stuffed full, 14 quarts with syrup and still almost 3 bushels left. Oh my.

Does anybody have tips on the sauce? I was thinking I would just cook them down and strain them like the sauce. Hubby thought the soft ones would just go through my food mill without cooking. Any suggestions? Do you sweeten it a bit?

Another pear pie:

Basic pear pie, then top with crumble mixture including butter, flour, sugar, salt and shredded cheddar cheese. Very delish.
