Hot Veggie Pickles

cauliflower
carrots
celery
sweet peppers
onion
hot peppers
vinegar

Hard veggies like the ones suggested above work best! Clean and cut the veggies of your choice up into nice bite size chunks about a inch or so long. Mix the veggies in a big bowl and then pack them into sterile canning jars.

Mix apple cider vinegar with water in a ratio of about 1 to 3. You can adjust the vinegar somewhat to your taste. Heat the vinegar solution to boiling and fill the jars to within a 1/4 inch from the top. Close jar with a canning lid.

Process jars in a water bath canner for 10 min for pints and 15 min for quarts.

Let jars stand for several weeks before eating to intensify flavors.

The recipe can be made using small quantities and then simply kept refrigerated instead of canning for quick eating.

Thanks FF, I have everything except the cauliflower. Got to go to the store today anyway so will pick some up. That really sounds good.
