Phytates and almond butter question..

Ok I know I have been cheating with store bought almond butter b/c I had too much on my plate to make my own.

My jar is almost gone now and I think I'll have the time to make my own this weekend.

Question: I know how to make NT's recipe for dried crispy almonds. I was wondering why not roast the almonds rather than dry them in a dehydrator? (I think the almond butter will taste better that way.)

Oh. I'd never thought of soaking my almonds in yogurt and then grinding them into my own butter. YUM.

The reasoning behind dehydrating, is to keep the enzymes alive and happy.
However!
This is not a requirement :lol:

Abi, its not yogurt. You strain off a bit of whey from the yogurt :D

I think I put a tablespoon of yogurt in the water with it. So that wasn't right?

I'm out of the dairy business for the time being, so can I use a bit of ACV instead of whey?

(Then I'm making my own nut flours too.)

OOOH, I had an idea, I'll roast the almonds to make a paste and then use the dried almonds to make it "Chunky". So taste and enzymes.

Yes, you can use ACV, it may taste slightly different but it should still be yummy. Please report back on how you did it and how it came out!
