Pie Pumpkins!??

oh yeah--where to start? Peaches, apples or pears? Pumpkins, squash, potatoes? Roasted root veggies? Or should I start pounding out homemade bread and soup... So much food to eat and so little time!

I have never tried Butternut squash...when I told hubby I was getting some, he wrinkled his nose and said....for the pigs right? LOL Im gonna have to come up sith some special recipe that he will like. Unfortunately..he is a meat and potato guy. :/

Cooking Butternut Squash
Poke a slit in the squash, set it on a piece of aluminum foil in a 350F oven and roast it until it is tender, 45 to 60 minutes depending on its size and how long it has been stored. Then it is easy to scoop the squash away from the shell. It can also be mashed with butter and brown sugar and a little nutmeg or cinnamon.

You can substitute winter squash for pumpkin in a pie recipe and make a squash pie. Very Yummy!


Pumpkin Risotto
1/2 lb. ground beef
2 Tbsp olive oil
1/2 cup pumpkin, cooked and pureed, or canned
5 cups veggie stock (or beef or chicken)
1/2 tsp. salt
3 Tbsp grated Parmesan cheese
2 cups rice

Heat oil in a large 12" skillet. Cook ground beef and pumpkin. Add rice and toss. Cook for 2 minutes. Add salt. Add stock a little at a time, stirring constantly. Continue cooking rice until done, approximately 23 minutes. Mix in cheese. Can be served as a side dish or main course. Serve with tossed salad, if desired as main course.

We also make this meal without beef. Also good with any winter squash instead of pumpkin.


Sweet Pumpkin Dip
From Our Ohio - Grow It. Know It. Live It.

4 cups confectioners sugar, sifted
2 8-ounce packages cream cheese, softened
1 30-ounce can pumpkin pie filling mix (includes seasonings)**see note
2 teaspoons cinnamon
1 teaspoon ginger

In large bowl, mix sugar and cream cheese, beating until well blended. Add remaining ingredients. Store in refrigerator. Serve in bowl or hollowed out pumpkin with gingersnaps or vanilla wafers. Makes 7 cups.

**Note: use equivalent amount of pureed pumpkin and add pumpkin pie spices

Squash Griddle Cakes
1 pint canned winter squash (like pumpkin)
1/2 t salt
2 T sugar
3 T baking powder
2 1/4 c milk
3 T flour
2 c whole wheat flour
3 T oil for frying
1 tsp vanilla
1/2 tsp cinnamon or pumpkin pie spice

Mix all together - will be slightly lumpy. Fry like pancakes, only you have to do the first side twice or it stays soggy in the middle.

These were popular during the depression.

Thanks - I just saved em too. :drool I love butternut anything and pumpkin pie. I 'm looking forward to trying those preserves too.

I'm married to an incurable M&P guy, too. Here's what you do: Give him his meat and potatoes AND squash :) I roast squash, onions, garlic, sweet peppers and potatoes drizzled with olive oil and sprinkled with salt, pepper and rosemary (husband prefers that be left out, referring to it as "pine needles that get stuck in my teeth!"), then roasted until crispy outside and tender inside.
