How about drying the thistle to sell the seeds for birders? We gather it to feed our wild birds because I can't afford to buy the gourmet seeds in the store.
This is Canadian Thistle, noxious to cattle, I think. On the list anyway. I have Black Angus for my closest neighbors, Everyone around here digs them up pretty dillegently. The flowers are kind of pretty, though!
