Please tell me there is an easier way.... pepper peels

Ok, I admit a new addiction to roasted red pepper soup. :drool

But there has to be an easier way to get the skins off than roasting them. yes? no? Is it possible to dip them in water like you do tomatoes, and then roast them afterward for the flavour?

When I roast them to remove the skins, some of the pepper gets too hot, while other parts of the pepper doesn't get enough heat to loosen the skin.

anyone got any tips?

Oh, and btw, the soups is AWESOME with fennel seed ground up. ;)

The big roasters here have a mesh cylinder that they fill with pepper and turn it over a fire. So all of it roasts fairly evenly.

wow Abi! those pix remind me of some fun times - those huge roasters are incredible!

MTN - are you charring them then putting them in a bag? its time consuming but must of the skins should peel off pretty easily.

I have seen after you roast you put them in a brown bags. Fold it up and let them sit a couple minutes. I think trapping the steam helps the skin to slide right off.

Yes. You let them "sweat" until they are room temp.

Yup, into closed paper bag after roasting, then sit til cool enough to easily handle.

The only time I have ever had the SLIGHTEST bit of trouble was if I do an egregiously terrible job of evenly roasting them - for instance if you put them on a cookie sheet in a very hot or broiler-mode oven and then don't turn them at all but put them into the bag with the underside still basically raw. That doesn't work well. But as long as you get the whole thing reasonably roasted, no problemo.

If you end up with the skin coming off in tiny pieces (usually b/c you very "enthusiastically" roasted the pepper into a crusty black mess <g>) just rub the skins off under a stream of running water, quick and non-messy.

I have put peppers in boiling stock and not had the skins peel off so I sincerely doubt you could skin them that way like with tomatoes, plus which I do not think you'd want to roast them *skinless* because they would get dried and charcoal-y.

I pop the into a large ziplock or into a bowl covered with plastic wrap. Let set for 5-10 mins and the peels will slide right off.

Yep, roasting them in the oven, turning religiously, and putting into a paper bag. the peppers i roasted were not a 'perfect' pepper shape, and the peels were a major pain to peel off. I was just hoping there was an easier way, but I guess not. Oh well, thanks anyways. i will still do it, since I love the soup so much :)

Yup, what they said! Pop 'em in a bag for a bit and the skins come right off!

That's just it--they did not come right off. I did 16 peppers and stood at teh kitchen sink for very close to an hour getting th dern peels off. and they were roasted well, and placed in a paper bag until room temperature.

I think next time, I'm gonna roast them, make the soup and then strain through a food mill.
