How roasted did you roast them -- like something you would want to eat (= not enough) or blackened and blistering and charcoal-y all over (= right)

Roast and then puree. Done.

Mine is really easy. Colorado styled green chili.

Chicken stock, lots of chilis (I use my fingers to smoosh it and break them up a bit >.>), sauteed onions and bell peppers, and chicken cubed and browned in bacon grease.

Cook together, add lots of spices like chipotle chili pepper and cumin.

Add a block or so of cream cheese at the end.

Serve with fresh diced tomatoes, cheese, olives, and whatever else I can find to toss on top.
