Primal Hummus (Zuchinni Hummus)

So for all you Hummus lovers, here is a replacement that honestly tastes better in my opinion. This is absolutely amazing, I have used it on breakfast, lunch, dinner and everything in between. Enjoy
Ingredients:
2 peeled and cut zucchini
3/4 cup of tahini
1/4 cup of olive oil
1/2 cup of lemon juice
4 cloves of garlic
2.5 teaspoons of sea salt
1/2 tablespoon of ground cumin

Steps
(Be afraid this is very labor intensive, don't work too hard)
Combine all the ingredients in a food processor or blender
Blend thoroughly
Enjoy
I have this recipe in my "grain free blah blah blah" thread, however it is hard to find when I need it, so I'm giving it it's own thread. (It is really very, very good too.)

I love a tomato sandwich made with hummus instead of mayo. Does the squash act to replace the garbonzo beans?

It does, and it tastes exactly the same, if not better. The texture is the same too. (We can't do grains or legumes.)

:sick I'm the only one around here that can't stand hummus. Oldest DS made some with so much garlic that I banned it from the house. I'm not sure if it's a texture thing or what. But I'm saving the recipe as same son would probably like to give yours a try!

Does tahini go bad? I have an open jar that he left here, I've never used it. It's probably a year old now, he'll be back in November.

Dumb question... what part of the grocery store do I find tahini? I've never used it before but have seen a lot of recipes lately (yours included) that I'd like to try.

Maybe in the Ethnic section? The jar I have has all kinds of Indian words on it, so I know DS picked it up at the Indian market in another city.

I have a jar of tahini that was opened last year and it's still good. Just smell it. Found ours in the health food store, near the peanut butter and almond butter. Not sure if regular grocery stores carry it.

I do like hummus from chickpeas, but will have to try this. Looked closely at the recipe and since it calls for raw zucchini, it might work for Hubby and me. (I really HATE cooked veggies, especially squash). Son won't eat it no matter what, but this is certainly a great idea to use some of that surplus zuke from the garden.

Gosh. Here it's in about EVERY store either by the peanut butter or in the ethnic.
