Question about making Maple Syrup

My mom and I just got done boiling our sap down yesterday. We had over 12 gallon to boil down and we used a wood cookstove till we got it down so far,..then we put it on the electric stove. It took all of two days to get it all boiled down using the wood heat,..and wouldn't you know it had to be 70 degrees here,..man was it HOT in the house! Next year we are planning on getting a pan made and using it over a open fire. We had neighbors years ago that did it that way,...it seemed to work out well. We ended up with a little less than 3 pints of syrup,..but man is it GOOD! :drool

We did maple syruping for the first time last yr. There's a slight learning curve to it but over all very simple. Things we changed this yr.

Cooked it down out doors on flat top woodstove. When low enough we finished it on the gas stove indoors.

It was time consuming outside so we have jobs around the house to keepmun busy in between checking the fire.

We went with a flat evaperator this yr. FLAT IS GOOD!!! Boils it donw faster than a pot.

If this is your first time think learning not I want to make a lot. We made enough for a few meals last yr and bought the rest we needed but we learned completely how to do it. Now wwe are thinking quantity.

Yes, the more surface area you can boil off of the faster it will evaporate! I use an enamel roasting pan on the stove because it is a nice big flat open pan. I finish it in a tall stock pot to accomodate any foaming (I don't like the flavor of adding a defoamer or oil to it).
